There’s something about the first days of spring that just feels different. The air is lighter, the
sun lingers a little longer in the sky, and the city slowly starts to smell like coffee, fresh
flowers, and freshly baked pastries.
After a long winter, we’re not really looking for big changes. Sometimes the smallest,
sweetest moments are enough to remind us that the better part of the year is finally here.
Spring Mornings in the Bakery
At our bakery in Manhattan, spring tends to begin the same way every year. Slowly, gently,
and with a lot of color.
People come in without rushing. They pause in front of the display case, looking things over,
and then they smile like they’ve just found something they’ve been waiting for.
Spring is when we naturally drift back to lighter flavors. Fruit creams, vanilla, lemon, desserts
that don’t feel heavy, just fresh.
The First Flavors of the Season
One of the first things that returns to the display case each season are the fruit tarts.
Strawberries, raspberries, blueberries. The kind that look like they came straight from a
farmers market rather than a kitchen.
Then there are the soft vanilla cakes with fresh cream, lemon desserts with that perfect
balance of sweet and tart, and smaller treats that are just right for an afternoon walk through
a sunny city.
Cake for No Particular Reason
Spring is also the time when people buy cake for no particular reason.
Not because it’s a birthday.
Not because there’s a celebration.
Just because it’s a beautiful day. Because it’s Saturday. Because after work they decided to
walk a few extra blocks and stop in for something sweet.
One of my favorite moments is when someone walks in and says:
“I just need something small, just to celebrate the fact that the weather is finally nice.”
And honestly, that’s exactly what spring desserts are. A small way to celebrate a shift in
mood.
The Small Rituals That Make the Season
Soon enough the holidays will be here. Family lunches, Easter brunch, long afternoons
gathered around the table.
But before the big occasions come these quieter, everyday rituals. Cake and coffee in the
sun. A small box of pastries shared with coworkers. A tart picked up on the way home,
completely on impulse. Little things, but more than enough to remind us that winter is over.
And when the first strawberry cakes appear in the bakery window, that’s when we know
spring has really arrived.
