The Secret to a Perfectly Moist Sponge Cake: Little Tricks That Make a Big Difference

If there’s one cake that’s the backbone of almost every great dessert, it’s the sponge cake. Simple and classic, but honestly, it can be a little tricky. On paper it looks easy: eggs, sugar, flour, maybe a pinch of baking powder. But anyone who’s baked a few knows there’s a huge difference between a “good” sponge and one that’s perfectly moist, airy, and just… unforgettable.

It all starts with the eggs. They’re the heart of the sponge. Separate the whites from the yolks. Whip the whites into soft peaks, but not too much, or they’ll be tricky to fold in. Beat the yolks with sugar until they’re pale and creamy. That’s when the magic starts: the sponge gets that delicate, fluffy structure that melts in your mouth.

Some bakers add a spoon of oil or melted butter to the batter for extra moistness, or fold in warm milk at the end. The result? A sponge that basically melts in your mouth.
